I wonder if being in transit on a ship that first went to the ETO, enroute to their next stop in South America, would have qualified any of them?

If they had to go to Iceland, London or Casablanca for some TDY they may have been in the ETO long enough to qualify for the medal. Good luck wit the research.

Just to continue this question...as Ive often wondered.... how long is long enough to earn each medal?

You had to spend 30 days in theater in order to qualify for the campaign medal unless the soldier, sailor or marine was wounded of killed in action, which would allow for the time requirement to be waivered.
