WWINerd and others have written some good posts about uniforms. One thing that comes to mind, are the cotton uniforms. When we entered the war in 1917, we had a shortage of uniforms (and appropriate wool) to equip the newly expanded Army. The wool uniforms were badly needed in France for the AEF in the winter of 1917-1918, and a result was an acute shortage of winter clothing for the men in the stateside camps. They had to make do with cotton uniforms in a bad winter, it was nearly a scandal at the time. That should be covered in one of the threads.
