rifledoc1 Posted May 17, 2014 Share #1 Posted May 17, 2014 I am posting this topic in hope of learning a little bit more about a military kitchen knife set I recently purchased. All four knives were manufactured by OKC and are marked with the company name and NSN. All the NSNs are still active as per WebFLIS. My specific question is when were these knives likely manufactured? I am assuming sometime in the 70s or 80s. 7340-00-680-0863 Knife, Slicing 7340-00-205-3335 Knife, Butcher's 7330-00-680-2634 Spatula 7340-00-291-0625 Knife, Steak, Scimitar
jeb137 Posted May 17, 2014 Share #2 Posted May 17, 2014 Wood was removed from food service operations in the early 70's. All knives, utensils and cutting boards were phased out and replaced with PVC. Wood was found to harbor pathogens where PVC would not. So your knives are more than likely 1960's. Jon B. Newaygo MI
rifledoc1 Posted May 19, 2014 Author Share #3 Posted May 19, 2014 Jon B. Thank you much for the information. I was thinking 70s or 80s since I thought the 13-digit NSNs did not start being used until 1974. R/S Shawn
jeb137 Posted May 19, 2014 Share #4 Posted May 19, 2014 Shawn; I know Navy food service, not the stock system so much. So if the stock system changed in 74, and by 76 they were phasing out wood in food service ops, then they are more likely mid 70s. Maybe later if the other branches didn't phase out wood handles and cutting boards about the same time. So your guess is probably closer than mine.
