That is a fabulous collection! You must be thrilled! Always fun to have the story of an item/group of items! This is so fun about the cook patch. Never heard of one before this! Really cool to get to see a jacket with one on it! Also, I LOVE the cook hat! Regulation chef's hats! What is the multi-coloured band on his hat? Did they just change to circles by WWI? cook patch 02-08.JPG Rectangle from 1902 - August 1908; circle from August 1908 - August 1920 (per "U.S. Army Soldiers And Their Chevrons", by William K. Emerson - the reference work you need to have if you're interested in Army chevrons). They were worn on the sleeve between shoulder and elbow in the few photos I've seen of them.
