For the record the conversion in the photos was done on an M1906 cavalry saber. These were made by Ames. They are identical to the M1860 saber but made with a browned iron hilt. They must have made a lot of them or else they get resold a lot. Mostly you will find the knife crafters variety with leather handle but the sword handled knives are routinely for sale.
